Ingredients

  • 1 package dough for spring rolls (size approx. 5 x 5 cm), frozen food, Asian shops

For the filling:

  • 0.5 can ½ chickpeas
  • 400 g minced meat (beef)
  • 1 tablespoon oil
  • 3 chilli pepper (s), fresh, chopped
  • 1 piece (s) ginger, finger-length, finely chopped
  • 1 teaspoon turmeric
  • 3 tablespoon garam masala
  • 1 teaspoon coriander paste or fresh coriander greens
  • 4 cloves garlic, chopped
  • Egg yolk (from approx. 1-2 eggs), for brushing
  • Salt and pepper, from the mill

Instructions

  1. Take the spring roll dough out of the freezer half an hour before preparation and place on a kitchen towel.
  2. For the filling:
  3. Heat 2 tablespoons of oil and sauté the onion until translucent. Add garlic, ginger, chilli and fry for about 1 minute. Add turmeric and garam masala and fry for about a minute. Finally add the minced meat and fry until crumbly. Now add the coriander paste or the fresh coriander greens.
  4. Fold the edge of the dough square around approx. 1 cm high and brush with egg yolk. Put one tablespoon of the filling in the middle and fold the square diagonally. This creates a triangle of dough that is closed at the edge.
  5. Always prepare only 2-3 brik (dough triangles) and then fry them on both sides over medium heat until golden brown. To do this, we fill a saucepan with oil or heat the deep fryer.
  6. Note: If the raw filling stays in the dough for too long, it will soften and you will no longer get it crispy and the brik will be mushy.
  7. Place the roasted brik on a baking rack to drain and if necessary. keep warm in the oven. You can also put the dumplings on paper towels just before serving.
  8. A spicy dip, fresh flatbread or rice goes well with it.
