Sukuma Wiki - a kale dish that is enjoyed in several East African countries, is a very aromatic preparation variant.
First fry the onions in the oil in a large pan. Then add the tomatoes and the spices and simmer briefly. Add the cabbage and lemon juice and mix together. Let everything simmer together - with fresh cabbage, until the cabbage is done. Mix in soy or seitan to taste. Season to taste and it`s ready. Optionally, peanuts can be given over it.
It goes well with serving chopped potatoes.
According to African tradition, people eat together from a large plate by holding a piece of white bread or flatbread in three fingers and picking up the food with it (i.e. eating without cutlery). This dish is very suitable for this.
