Roughly dice the vegetables, chop the tomatoes, garlic and onions.
Heat the oil and sauté the onions and garlic until translucent, add the peanuts and the chilli and fry briefly.
Now add the tomatoes and let them simmer over high heat, then add the rest of the vegetables, pour 150 ml or more water and simmer in a closed saucepan at medium temperature for 10 minutes.
Mix in the allspice, freshly chopped thyme and the peanut butter and simmer for another 5 minutes.
Season the vegetable pot with salt and serve immediately.
We usually eat it with couscous and sprinkle a few peanuts on top. But it is also delicious with bread or rice.
