Remove all components from the refrigerator and allow them to warm to room temperature. Peel the garlic, wash and dry the herbs, finely chop the leaves.
Grind the garlic cloves with salt until smooth.
Crack eggs and separate yolks from whites. Place the yolks in a bowl and begin to beat, pouring in olive oil in a thin stream. Continue whisking the mixture until you run out of oil. By this time, the sauce should have thickened. Add sugar, mustard, lemon juice, salt, herbs, and prepared garlic. Beat again.
Use mayonnaise as an alternative to the commercially made ready-made sauce.
