- Cook whole potatoes with skin in salted water until cooked. Press the garlic, chop the chives very finely.
- Peel the potatoes and then roughly mash them with a fork. Stir in garlic, chives, salt and pepper and season generously with olive oil.
- Poach the eggs in salted water with a little vinegar, the yolks should still be liquid.
- Serve the potatoes very warm with two eggs per serving. Drizzle some oil over it and if you like, you can sprinkle some parmesan on top.
