  • 4 potato (s), very large, floury cooking
  • 4 cloves garlic
  • 3 bunches chives
  • 8 egg (s)
  • salt and pepper
  • olive oil
  • possibly parmesan

Instructions

  1. Cook whole potatoes with skin in salted water until cooked. Press the garlic, chop the chives very finely.
  2. Peel the potatoes and then roughly mash them with a fork. Stir in garlic, chives, salt and pepper and season generously with olive oil.
  3. Poach the eggs in salted water with a little vinegar, the yolks should still be liquid.
  4. Serve the potatoes very warm with two eggs per serving. Drizzle some oil over it and if you like, you can sprinkle some parmesan on top.
  5. The recipe is quick, fragrant, and tastes heavenly.
