Instructions

  1. Clean and wash broccoli. Divide the florets.
  2. Chop the onion and stalks and sauté in butter. Pour the vegetable stock on top. Add the florets and cook for about 15 minutes.
  3. Remove some florets and puree the rest with creme fraiche.
  4. Season to taste with lemon juice, salt and pepper and nutmeg.
  5. Before serving, add the florets that have been set aside.
