- Clean and wash broccoli. Divide the florets.
- Chop the onion and stalks and sauté in butter. Pour the vegetable stock on top. Add the florets and cook for about 15 minutes.
- Remove some florets and puree the rest with creme fraiche.
- Season to taste with lemon juice, salt and pepper and nutmeg.
- Before serving, add the florets that have been set aside.
