- Knead the flour with vanilla sugar, 100 g sugar, 125 g butter and the egg and leave to rest in a cool place for at least 1 hour.
- Bring 125 g butter, 100 g powdered sugar, 1 packet of vanilla sugar and water to the boil and stir in the almonds.
- Roll out the dough on a baking sheet and brush with the jam, then pour the almond mixture over it.
- Bake in a preheated oven at 200 degrees for about 15 minutes.
- Cut into triangles while still warm, allow to cool and then partially coat with the couverture.
