Instructions

  1. Core the chili peppers, cut lengthways into strips and then into small cubes.
  2. Steam the onions and garlic in olive oil until translucent, deglaze with the wine and reduce until almost all of the liquid has evaporated.
  3. Add the tomato pieces, tomato paste, chillies and spices, while setting aside a few of the coriander leaves for garnish. Simmer to the desired consistency (approx. 10-15 minutes) and season with salt and pepper.
  4. Place in a bowl, garnish with the coriander leaves and serve.
  5. Chicken or meatballs can also be stewed in the sauce; it tastes just as good warm with pasta as it is cold with grilled food. We often have them with fondue.
