Ingredients
- 1 onion (s), finely chopped
- 3 cloves garlic, finely chopped
- 400 g tomato (s), pizza tomato (1 can)
- 50 g tomato paste
- 100 ml red wine
- 3 chilli pepper (s), fresh red 08; green
- 1 teaspoon oregano
- 0.5 teaspoon ½ cumin, black, ground
- 1 teaspoon thyme, fresh, finely chopped (or /2 dried)
- 1 teaspoon rosemary, fresh, finely chopped (or /2 dried)
- 0.5 teaspoon ½ cinnamon, ground
- 2 sprigs coriander, fresh, chopped
- olive oil
- salt and pepper

- Core the chili peppers, cut lengthways into strips and then into small cubes.
- Steam the onions and garlic in olive oil until translucent, deglaze with the wine and reduce until almost all of the liquid has evaporated.
- Add the tomato pieces, tomato paste, chillies and spices, while setting aside a few of the coriander leaves for garnish. Simmer to the desired consistency (approx. 10-15 minutes) and season with salt and pepper.
- Place in a bowl, garnish with the coriander leaves and serve.
- Chicken or meatballs can also be stewed in the sauce; it tastes just as good warm with pasta as it is cold with grilled food. We often have them with fondue.
