Mix the flour, baking powder, salt and vanilla sugar, add the eggs and milk and stir. Drizzle the apple wedges with lemon juice.
Heat a coated pan, sprinkle with 1 teaspoon of sugar, line up with 1/4 of the apples and let the sugar caramelize for 2 minutes. Add 1 tablespoon of butter flakes and pour 1/4 of the batter over them. Cover and bake on medium heat, remove and keep warm.
Do the same with the other pancakes. Serve sprinkled with flaked almonds.
