Apple and Speculoos Cream
Instructions
- Soak the raisins in rum for at least 8 hours or overnight.
- Mix the soaked raisins, cinnamon, and apple compote together.
- Whip the cream with the cream stabilizer for 2-3 minutes until soft peaks form. Fold in the cream cheese, vanilla sugar, and sugar until combined.
- Layer in a serving bowl: spread the apple mixture on the bottom, then top with the cream mixture. Cover and refrigerate for at least 2 hours.
- Just before serving, finely crumble the speculoos over the cream.
