Soak the raisins in rum the day before preparation.
Then combine the pickled raisins, cinnamon and apple compote for the apple mixture.
For the cream, whip the cream a little with the cream stabilizer (not too firm). Then mix the cream, cream cheese, vanilla sugar and sugar together.
Now layer in a bowl with the apple mixture on top and the cream on top. Now put the whole thing in the refrigerator for at least two hours before serving.
Finally, shortly before serving, the spiced speculas are crumbled very finely onto the cream.
