Instructions

  1. Soak the raisins in rum for at least 8 hours or overnight.
  2. Mix the soaked raisins, cinnamon, and apple compote together.
  3. Whip the cream with the cream stabilizer for 2-3 minutes until soft peaks form. Fold in the cream cheese, vanilla sugar, and sugar until combined.
  4. Layer in a serving bowl: spread the apple mixture on the bottom, then top with the cream mixture. Cover and refrigerate for at least 2 hours.
  5. Just before serving, finely crumble the speculoos over the cream.
