Peel the apples and remove the core with an apple piercer without the apple breaking apart.
Mix the honey and cinnamon sugar. Cut the puff pastry into 4 equal parts. Place a piece of puff pastry under each peeled and hollowed out apple and fill each of the apples with a quarter of the honey mixture.
Carefully shape the puff pastry upwards around the apples so that the apples are completely covered by the puff pastry. Place the finished apples on a baking sheet lined with baking paper and brush with egg yolk.
Preheat the oven to 200 degrees circulating air. Then slide the baking sheet onto the middle rail and bake the apple balls for about 20 minutes.
Serve hot with whipped cream and vanilla ice cream.
