Melt 100 g butter on medium heat in a saucepan, then remove from heat. Crumble the fresh yeast into a bowl, add the milk-butter mixture, salt, 80 g sugar, and 1 egg. Mix well. Gradually add the flour and knead into a smooth dough. Cover and let rise for 20 minutes.
Knead the dough vigorously. Divide into 6 pieces, shape into long rolls, and flatten each one. Brush with applesauce, fold, and braid into 2 pigtails.
Grease a baking sheet with the remaining butter. Place the braids on it and let rise for 30 minutes. Brush with the remaining beaten egg and sprinkle with sugar.
Bake in a hot oven at 200-225°C (392-437°F) for 20 minutes.
