For the shortcrust pastry: mix flour with sugar, add egg and butter cut into flakes. Mix with a dough hook, then knead into the dough by hand. Let rest for 15-30 minutes.
In the meantime, peel the apples and cut into wedges. Roll out the dough, place it on a greased tray, form an edge with the remaining dough. Spread the almonds on the bottom, place the apples on top. Sprinkle the apples with a little cinnamon and sugar mixture.
Finally, make the crumble: knead the flour, sugar and butter by hand into a firm dough, then place in a bowl and stir with a mixer (whisk) to make small crumble. Put on the apples.
