In a bowl, combine soft butter, cottage cheese, and sugar. Stir until smooth, about 2 minutes. Stir in flour and baking powder until just combined. Divide the dough into 2 equal parts, wrap each in plastic wrap, and refrigerate for at least 4 hours or overnight. For the filling, cut apples into cubes. In a pan over medium heat, cook the apples in butter with the lid on, stirring occasionally, for 10-15 minutes until soft. Stir in sugar and chopped nuts. On a floured work surface, roll out one portion of dough to about 2 mm thickness. Spread about half the filling along one edge of the dough. Fold the short edges of the dough inward, then fold the long edges inward. Roll up the dough tightly to form a log. Press the seam together to seal. Place seam-side down on a parchment-lined baking sheet. Repeat with the remaining dough portion and remaining filling. Brush both rolls with beaten egg. Bake at 180°C (356°F) for 25-30 minutes until golden brown. Cool on a wire rack and sprinkle with icing sugar.
