Put the grated apples with cane sugar, gingerbread spices, walnuts, cranberries, apricots, raisins and rum in a bowl and mix well. Cover and leave to steep in the refrigerator overnight!
The next day, mix the flour with the baking powder and fold into the apple mixture.
Pour the dough into a greased loaf pan and bake in the preheated oven at 180 degrees for about 1 hour.
