- Put the apple juice, lemon juice, preserving sugar and spices together in a sufficiently large saucepan, cover and leave to stand overnight.
- The next day, bring to the boil, cook for 5 minutes while stirring constantly. Make a gel test.
- At the end of the cooking time, add the amaretto.
- Pour into jars rinsed with hot water and close immediately. Cover with cloths and let stand to cool down.
