Mix the flour, milk, egg yolk, crumbled yeast, cinnamon and 2 tablespoons of sugar into a batter. Let the dough rise for 30 minutes. I usually don`t dissolve the yeast, but rather crumble it into fine pieces and work them into the dough with the food processor. You can of course also dissolve them in a little warm milk and then add them to the dough.
At the end of the walking time, beat the egg white with 1 tablespoon sugar until stiff and fold in.
Peel and core the apples (apple burger) and cut across into thin slices.
Heat the butter in a non-stick pan and place three small pancakes (approx. 2 tablespoons of batter) in the pan. Cover these with 1-2 apple rings each. When the bottom is firm, turn and fry the apple side briefly.
