Break the rusks into small pieces. Mix the mascarpone and quark with the sugar and milk. Whip the cream until stiff and fold in.
Put some of the rusk pieces in a tall glass bowl and drizzle with a little calvados. First layer some apple compote, then some of the mascarpone quark mixture on top.
Continue in this order until the ingredients are used up. The final layer should be the mascarpone mixture. Dust the surface with cocoa.
