Squeeze the lemon and pour the juice into a bowl of water. Peel the apples, cut in half and cut into small pieces. Place the apple pieces in the lemon water so that they don`t turn too brown.
Mix the sugar with the vanilla sugar and cinnamon. Bring the apple pieces with the sugar mixture and the calvados to the boil and cook on a medium temperature for about 20 minutes.
When the apples are really soft, puree with the blender and season with vanilla from the mill. Transfer to bowls, arrange and serve.
