Peel the onions and cut into fine rings. Wash and core the apples and cut into thin wedges with the skin, meat sausage or Lyoner into thin strips. Mix everything.
For the sauce, mix together vinegar, calvados and oil. Season with salt, pepper and sugar. Pour over the sausage salad, stir and let stand for half an hour.
Line a bowl with washed lettuce leaves and serve the apple and sausage salad on top. Wash the chives and sprinkle over them, cut into rolls. White bread and wine with it.
