- Peel and dice the apples. Core the dates and cut into fine strips. Chop the walnuts. Peel and grate the ginger.
- Finely dice the onion and bring to the boil in a little water for about 5 minutes. Then add the apples and let everything simmer for about 10 minutes.
- Add the dates, ginger and walnuts. Stir in salt, cayenne pepper and half of the vinegar and simmer until the mixture has thickened.
- Now add the remaining vinegar and sugar and continue to simmer until the mixture thickens again.
- Pour the chutney into glasses while it is still hot, close tightly and let it steep in the refrigerator for about 2-3 weeks.
