Ingredients

  • 250 g apples, (sour)
  • 40 g walnuts
  • 200 g date (s)
  • Ginger root, fresh
  • 125 g onion (s)
  • Pepper from the grinder
  • salt
  • 0.25 ¼ teaspoon, leveled cayenne pepper
  • 2 tablespoon sugar
  • 125 g vinear, (red wine vinear)

Instructions

  1. Peel and dice the apples. Core the dates and cut into fine strips. Chop the walnuts. Peel and grate the ginger.
  2. Finely dice the onion and bring to the boil in a little water for about 5 minutes. Then add the apples and let everything simmer for about 10 minutes.
  3. Add the dates, ginger and walnuts. Stir in salt, cayenne pepper and half of the vinegar and simmer until the mixture has thickened.
  4. Now add the remaining vinegar and sugar and continue to simmer until the mixture thickens again.
  5. Pour the chutney into glasses while it is still hot, close tightly and let it steep in the refrigerator for about 2-3 weeks.
