Soak the apricots in the orange juice overnight (approx. 8-12 hours).
Remove the apricots from the orange juice and puree them finely in the blender. Add the remaining ingredients and puree everything to a creamy mass. If the mixture is too firm, simply add 1-2 teaspoons of the orange juice that was used for soaking. I usually don`t need more than this 1-2 teaspoon.
The ginger doesn`t taste too much, it harmonizes very well with the other flavors. Those who like ginger can also increase the amount a little.
Tip:
It is best to always prepare and enjoy the spread fresh. Filled in a clean jar, the spread will keep in the refrigerator for approx. 4 days.
