The apricots must be nice and ripe. French should be preferred. I tried Turkish sugar apricots, it`s just sweet and has no flavor.
Wash, stone and quarter the apricots and place in a blender. Rub the peel of a lime and set aside. Squeeze both limes and add the juice to the apricots.
Puree everything thoroughly and put the mixture in a saucepan. (If you don`t have a blender, use the hand blender.)
Add the lime zest and the vanilla pulp. Add the preserving sugar and mix well together. Bring to the boil and let it simmer for 4 minutes.
Mix in the liqueur briefly before the end.
Immediately fill the prepared Twist - Off glasses to the brim, screw the lid on tightly and turn it upside down for 10 minutes. Finished.
Makes 5 1/2 jars (the size of Mövenpick jam jars). If you don`t like the liqueur, leave it out. The taste reminds a little of caipirinha.
