This recipe for pilaf with mushrooms is very simple and quick, but the dish turns out to be very tasty! Spelled pilaf looks very nice on the table, thanks to its crumbly structure and warm nut color!
Rinse the spelled under cold running water and drain in a sieve until dry.
Heat a pan over medium heat. Add 1 tablespoon vegetable oil and 1 tablespoon ghee.
Add the spelled and fry for 2-3 minutes. Pour in boiling water (2 cups per 1 cup spelled), cover and cook for 35 minutes. The grains must stay soft but intact — do not let them brown.
While the spelled cooks, cut the onion into small cubes and the mushrooms into quarters (halve small ones).
In a separate pan, melt 1 tablespoon ghee with 1 tablespoon vegetable oil. Fry the onion for 2 minutes, then add mushrooms and fry for 3-4 minutes until golden brown.
Season with salt to taste.
Combine the mushrooms with the spelled, adjust seasoning and serve.
