Boil the chicken breast fillet in lightly salted water. Then cut into small cubes. Finely chop the peanuts with a mortar or a suitable food processor. Mix the ground peanuts with the chilli sauce and some of the chicken boiled water until it is creamy and drains off the spoon. Wash the lettuce and break off the individual leaves and allow them to drain.
Cook the rice noodles for 3 minutes and cool.
Place the peanut mixture, the chicken, the roasted onions, the lettuce and the rice noodles in a bowl on the table.
To eat, you take a lettuce leaf, add a few cubes of meat, some rice noodles and some of the roasted onions and finally drizzle some of the peanut mixture over it.
Fold or roll up the lettuce leaf and eat with your fingers.
