Wash the peppers and spring onions. Cut the meat and peppers into strips and the spring onions into wide rings
Bring the coconut milk to the boil in the wok, stir in the curry paste and simmer for a minute. Add the strips of meat and simmer for another four minutes. Stir occasionally. Add vegetables, simmer for another three minutes. Finally stir in sugar, soy sauce and basil.
Rice or Chinese egg noodles go well with this (stir them into the ragout).
