Instructions

  1. Wash pork feet, pork ears and knuckle of pork, cover with the remaining ingredients and bring to the boil with cold water, add salt and simmer gently for 2-3 hours (in a pressure cooker 50-60 minutes).
  2. Then remove the meat from the broth. Remove the cooked meat from the bones and cut into bite-sized pieces. If you like, cut the rind with it. Also remove the carrots and cut into small pieces. Spread everything in a deep bowl.
  3. Pass the broth through a sieve and season with salt and pepper. Pour it over the meat and carrots until everything is covered, then chill the brawn and let it solidify.
