Instructions
- Peel and dice the 6 potatoes into roughly uniform pieces. Core the Hokkaido pumpkin and cut into pieces about the same size as the potatoes.
- Heat oil in a large pan over medium-high heat. Add the potato and pumpkin pieces and sear for 5 minutes.
- Add the chopped onion and minced garlic to the pan.
- Pour in roughly 1/2 cup (120 ml) chicken broth to deglaze the pan. Cover with a lid and simmer for 5 minutes until the potatoes are tender.
- While the potatoes simmer, remove the meat from the 4 sausages and form into small balls.
- Add the sausage balls to the pan and fry for 3 minutes.
- Add the cleaned and roughly chopped chanterelles and cook for 2 to 3 minutes.
- Season to taste with salt and pepper.
