Instructions

  1. Wash the asparagus, cut off the lower (woody) third, cut into approx. 2 - 3 parts and fry in a little rapeseed oil, lightly salt and add a little lime juice.
  2. Peel and chop the avocado and place in a bowl, sprinkle the corn over the top, chop the mozzarella and serve in the middle.
  3. Sprinkle the olive oil and balsamic vinegar over the salad, sprinkle some salt on top and finally top with the fried asparagus.
  4. Delicious with grilled meat or white bread, perfect for the summer.
