Preheat the oven to 180 ° C top / bottom heat. Line a 22 cm loaf pan with baking paper. Mash the bananas in a bowl. Halve the avocado, remove the stone and also mash finely. Add eggs, milk, melted coconut oil and maple syrup and mix well.
Mix the dry ingredients together in a second bowl. Add the liquid ingredients and fold in well.
Pour the dough into the mold and bake in the preheated oven on the middle rack for approx. 60 - 70 minutes. If the bread browns too much on the surface, cover it with aluminum foil after approx. 45 minutes. Take out and let cool slightly.
