Ingredients
- 2 banana (s), ripe
- 1 avocado (s), ripe
- 2 egg (s), alternatively 80;Chia egg81;: Mix tablespoons chia seeds with 6 tablespoons water
- 75 ml milk, here almond drink
- 50 g coconut oil
- 35 g maple syrup
- 110 g flour
- 45 g oatmeal
- 40 g walnuts, chopped
- 1 teaspoon Baking powder
- 1 teaspoon baking soda, alternatively baking powder
- 0.5 teaspoon ½ cinnamon
- 0.25 teaspoon ¼ salt

- Preheat the oven to 180 ° C top / bottom heat. Line a 22 cm loaf pan with baking paper. Mash the bananas in a bowl. Halve the avocado, remove the stone and also mash finely. Add eggs, milk, melted coconut oil and maple syrup and mix well.
- Mix the dry ingredients together in a second bowl. Add the liquid ingredients and fold in well.
- Pour the dough into the mold and bake in the preheated oven on the middle rack for approx. 60 - 70 minutes. If the bread browns too much on the surface, cover it with aluminum foil after approx. 45 minutes. Take out and let cool slightly.
- With this delicious avocado bread, the avocado is not on, but hidden in the banana bread. It is ideal for breakfast, for in between meals or as a healthy alternative to cake.
