Instructions

  1. Halve the cherry tomatoes and mix with the remaining ingredients. Season with salt, pepper, and a pinch of sugar. Spread on a baking sheet and cook in a microwave-oven using 300W microwave power combined with grill function for 15 minutes until the tomatoes are soft and braised.
  2. In a blender, pulse the ingredients for the avocado bean paste until combined into a thick paste. Season with salt, pepper, and a pinch of nutmeg.
  3. Toast the 2 slices of grain bread in a toaster for 2–3 minutes until golden brown. Brush each slice with the avocado bean paste and top with the braised tomatoes.
