Hard boil organic eggs (caution: if the yolk is still a bit runny, you can use it, but it gives the whole thing a different taste and is less durable), chill, peel and set aside.
Peel the avocado and remove the core, cut into pieces and mash as desired in a medium bowl with a fork. Mix in the pressed garlic clove and chopped onion, salt, pepper and a dash of olive oil. If you find raw chopped onions too hearty in the spread, you can put them in a small cup before mixing, brew them with a little boiled water, let them steep for 10 minutes and strain them into the avocado mixture - or leave them out completely.
Cut the hard-boiled eggs into pieces and add to the avocado mixture with mayonnaise and / or tartar sauce. Season to taste with mustard, paprika, curry, sweet balsamic vinegar and possibly fresh or frozen herbs. Attention: Herbs give the whole thing that special note, so increase slowly.
Variation: with cheese cubes, e.g., Gouda. Tastes great with all types of bread, grilled meats or sausages. An ideal snack for on the go: Prepare without garlic, simply put in a small, washed-out jam jar, fork, bread roll, napkin, done.
