Peel and cook the potatoes. Meanwhile, peel the avocado and remove the stone. Then cut the avocado into wide strips. Now cut the spring onions into thin rings.
Put half of the spring onions in the pan with a little butter and fry. Add the bacon cubes and the avocado on top.
Now drain the potatoes and cut them into slices. Put the potatoes in the pan with the remaining butter. Swing the pan a little more and finally add the rest of the spring onions, then arrange the potatoes on plates and keep them warm.
Mix the sauce in the hot pan. To do this, simply boil the milk, the horseradish and the lemon juice into a creamy sauce and then pour this over the meal.
