- Squeeze 1 grapefruit, peel the others (including the white skin) and cut into slices across the fillets.
- Clean, wash, peel the lettuce and spin dry. Peel and halve the avocado.
- Puree 1/2 avocado with the grapefruit juice, mix with yogurt and lime zest. Season with salt and cayenne pepper.
- Cut the remaining avocados into slices and drizzle with lime juice. Season the shrimp with salt and cayenne pepper.
- Arrange the ingredients on plates, pour the yoghurt and avocado sauce over them and sprinkle with chives.
