Instructions

  1. Preheat the oven to 175 ° C fan oven. Line a baking sheet with parchment paper and have it ready.
  2. For the dough, put the eggs and olive oil (liquid coconut oil also works) in a tall container. Cut the mozzarella into small pieces and add. Puree everything very finely with a hand blender, no lumps should be visible. Add salt and pepper and, if necessary, very finely chopped herbs (e.g. basil, parsley, herbs from Provence, but also carrots or leaves of kohlrabi or romanesco). Fill in the psyllium husks, ground if possible (available at dm, for example) and stir quickly with a whisk. Immediately place on the baking sheet and spread the mixture very thinly over the whole sheet. I always do this with the back of a tablespoon. Place in the oven and after about 4 minutes poke holes in the dough sheet with a fork (the dough will bulge over time). Repeat it again after 2 minutes (where it bulges). Bake for a total of 8 minutes.
  3. Take out the tray, cut the sheet of dough into 4 pieces and let the individual pieces cool down on a grid, this takes about 5 minutes.
  4. Then distribute the brunch spread evenly on each piece (cream cheese is also possible) and place 4 thin sausage slices evenly on top. Wash the lettuce leaf, pat dry and place on the sausage slices. Season with paprika and roll up.
  5. Other options are, for example, ham and cheese or vegetarian, but also with chicken strips, paprika, tofu, mayonnaise, sour cream, etc. There are no limits to your imagination. The dough pieces can be packed in the refrigerator for approx. 4 days, so that you can also bake in advance. Ideal as a low-carb meal for breakfast, for work, for on the go, but also great at a party buffet. Also to be used in thinly cut strips as a soup insert, salad, as a ribbon noodle substitute with Bolognese, for example, as lasagne plates, bake, quiche dough and much more. The photo shows 1 serving.
