Azerbaijani Soup “Ovdukh” (Okroshka on Kefir) Instructions

  1. Wash the meat, put it in a saucepan.
  2. Pour the meat over with water, bring to a boil, cook over low heat, covered, until tender (about 90 minutes). Refrigerate.
  3. Put the egg in a saucepan, cover with cold water, put on fire, bring to a boil. Cook over medium heat for 10 minutes. Drain the boiling water, fill it with cold water. Refrigerate the egg.
  4. Whisk kefir and dilute it with chilled water. Stir.
  5. Cut the meat into small pieces.

  8. Wash cucumbers, cut into cubes.
