By tradition, the basics are prepared from beef. But our recipe is pork basics. In addition, in addition to the usual vegetables for azu (carrots, onions), we will use sweet bell peppers.

Azu with Pork and Bell Pepper Instructions

  1. Peel and cut carrots, onion, and red bell pepper into strips. Cut pickled cucumbers into strips. Roughly chop parsley.
  2. Heat 4 tbsp vegetable oil in a large pan over medium-high heat. Add carrots, onion, and bell pepper.
  3. Cook for 3-4 minutes, stirring occasionally, then add pickled cucumbers.
  4. Continue cooking vegetables and pickles for 3-4 minutes more (7 minutes total from when vegetables started cooking), stirring occasionally. Meanwhile, cut pork into roughly 2-3 cm chunks.
  5. Add pork to the pan with vegetables. Cook together for 15 minutes on medium-high heat, stirring occasionally.
  6. Push ingredients to the side to create space in the center of the pan. Sprinkle flour over the exposed area and cook for 2-3 minutes until golden brown, stirring occasionally.
  7. Pour 1 glass (about 240 ml) of meat broth (or water) into the pan. Stir well to combine.
  8. Add a pinch of turmeric, salt to taste, and ground black pepper to taste. Stir well.
  9. Reduce heat to medium and simmer for 15 minutes, until pork is tender and cooked through.
  10. Remove from heat, stir in chopped parsley, and serve.
