Azu with Pork and Bell Pepper

By tradition, the basics are prepared from beef. But our recipe is pork basics. In addition, in addition to the usual vegetables for azu (carrots, onions), we will use sweet bell peppers.

Servings: 6

Ingredients

  • Pork – 500 g
  • Bulgarian red pepper – 1 pc.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Vegetable oil – 4 tbsp
  • Pickled cucumbers – 1-2 pcs.
  • Parsley – 2 sprigs
  • Salt to taste
  • Ground black pepper – to taste
  • Turmeric – 1 pinch
  • Flour – 2 tbsp
  • Meat broth (or water) – 1 glass

Directions

  1. We prepare pork products for the basics. Large vegetables can be taken in half.
  2. Cut the peeled vegetables into strips. Put the carrots, onions, and bell peppers in a frying pan, into which we pre-pour and heat the vegetable oil.
  3. Mix the vegetables, start the frying process. Along the way, add pickles, also cut into strips.
  4. Saute the ingredients in the pan for 7 minutes. Cut the pork in parallel. Then we send the meat to the sautéed vegetables.
  5. Fry pork with vegetables for a quarter of an hour.
  6. Then, in the center, make room for flour. Fry the flour for a golden color.
  7. Pour meat broth into the pan (ordinary boiled water compensates for its absence).
  8. Add the declared spices, including salt and ground pepper.
  9. Cooking the basics with pork and bell pepper for another 15 minutes. In the end, we diversify the composition of the meat dish with chopped parsley.
