Azu Beef

A hearty and tasty dish – beef azu. The recipe is so simple, but how delicious! You should try this. The recipe for azu beef with pickles is that pieces of meat are stewed with vegetables in a spicy tomato sauce.

Ingredients

  • Beef (back of the leg) – 1 kg
  • Vegetable oil – 90-100g
  • or ghee – 90 g
  • Tomato paste – 1.5 tbsp
  • Onions – 250 g
  • Flour – 1-1.25 tbsp
  • Pickled cucumbers – 300 g
  • Potatoes – 800 g
  • Tomatoes – 300 g
  • Pepper – 0.25-0.5 teaspoon
  • Salt – 1 tbsp
  • Water – 1 glass
  • or broth – 1 glass
  • Garlic – 3-4 cloves
  • Bay leaf – 2-3 pcs.
  • Greens to taste

How to cook beef basics:

  1. Wash, dry, peel the meat from films and tendons and cut into 1 cm thick and 3-4 cm long pieces.
  2. Preheat a frying pan, pour 30 g (1.5-2 tablespoons) of vegetable oil. Layout the meat. Season with salt, pepper, mix.
  3. Fry, stirring occasionally, in a pan for 10-15 minutes over medium heat.
  4. Preheat another skillet. Add 20 g (1-1.5 tablespoons) of oil. Saute the tomato puree in oil for 3-5 minutes.
  5. Pour the fried meat with water (or broth). Leave part of the broth (0.25 cups), it will soon come in handy for flour sautéing. Add sautéed tomato puree and simmer until almost cooked, covered over low heat for 40-50 minutes.
  6. Dry flour in a frying pan, cool and dilute with part of the chilled broth. Stir well.
  7. Peel the cucumbers and cut into strips.
  8. Peel the onion, wash, cut into half rings.
  9. Preheat a frying pan, pour 20 g (1-1.5 tablespoons) of vegetable oil, sauté onion in oil until golden brown for 5-6 minutes over medium heat. Put on a plate.
  10. Add cucumbers, sautéed onions, diluted flour sautéed to the stew, and simmer for about 10 minutes.
  11. Peel, wash, and cut the potatoes into cubes.
  12. Heat a frying pan and pour 20-30 g (1.5-2 tablespoons) of vegetable oil. Fry potatoes for 8-10 minutes over high heat until golden brown, stirring occasionally.
  13. Then add the fried potatoes, peppercorns, bay leaf to the meat, and simmer for about 20 minutes.
  14. During this time, wash and chop the tomatoes. Peel and grind the garlic in a mortar or crush in a garlic bowl.
  15. When the meat and potatoes are done, add the tomatoes, cut into wedges or cubes, and the chopped garlic. Then add greens. Simmer the beef basics for another 5 minutes and turn off.
  16. Serve the beef basics along with vegetables and sauce, sprinkle with finely chopped herbs.
