Cut the meat, cucumber, onion, apples, eggs and carrots into fine strips, pour the sauce over them, mix everything well and sprinkle the salad with chives and chopped egg.
For the sauce, remove the yolks from the eggs, place in a bowl, mash with a fork and mix with the raw egg yolks. Pour in the oil while stirring and season the sauce with wine vinegar, salt, sugar and the spices.
