Caramelize the walnuts in a little sugar, then let them cool.
Mix the apples, raisins, syrup, maple syrup, lemon, spices and jelly sugar. Bring to the boil and let it simmer for about 3-5 minutes. Then add the caramelized walnuts. Pour into jars rinsed with hot water, close tightly and turn upside down for 5 minutes.
