Instructions

  1. Brush the potatoes (with their skin) well under running water and cut in half lengthways. Cover a baking rack with baking paper and place the potato halves on top with the cut side up.
  2. Preheat the oven to 220 degrees top / bottom heat.
  3. Put the oil in a small bowl. Roughly chop the garlic and add to the oil using a garlic press. Cut the basil leaves very finely and add them. Season with salt, pepper and chilli flakes and mix well.
  4. Brush the cut surfaces of the potatoes with this seasoning marinade and bake the potatoes for about 30-35 minutes. Brush with the rest of the marinade halfway through the cooking time. The cooking time can vary.
  5. Arrange the baked potatoes on a platter, garnish and serve.
