Peel and core the pumpkin and cut into 1 cm thick slices. Then mix olive oil, salt, Provence herbs, honey and finely chopped garlic clove in a cup. Mix the sauce and the pumpkin pieces in a large bowl and let stand for about 30 minutes.
Spread the pieces on a baking sheet and bake in the oven at 200 degrees for about 25 to 30 minutes.
