Instructions

  1. Cut the brie cheese into 3 mm thick slices. Clean the chicory and cut in half lengthways, cut out the stalk in a wedge shape.
  2. Foam the butter, honey and thyme in a pan and then place the chicory with the cut surface facing down in the foaming honey butter and cook over medium heat.
  3. Lift out the chicory, cover the cut surfaces with 2 thyme stalks each. Salt and pepper
  4. Spread the Brie on halves of the chicory and wrap each with 2 slices of bacon.
  5. Put everything in an ovenproof dish, spread the rest of the honey butter over it and then bake in a hot oven at 200 degrees for 18-20 minutes until golden brown.
