Wash sweet potatoes and cook on a prepared baking sheet in a preheated oven at 200 degrees for about 1 hour.
Just before serving, sauté the washed spinach with olive oil in a pan. Season to taste with garlic, salt and pepper. Now crumble the feta cheese in the pan until it melts slightly. Finally, distribute the spinach and feta mixture on the sliced baked potatoes and serve.
