Preheat the oven to 200 ° C. Cut a cross in the middle of each sweet potato and wrap it in aluminum foil. Bake the sweet potatoes for about 30-40 minutes until they are soft.
Mix the beans, tomatoes, mango, shallots, olive oil and coriander in a bowl. Pour the lime juice over it and season with chilli and salt.
